cup red maraschino cherries (3 addtl reserved for top)

¼ cup pineapple

1 cup dark red wine

1 cup dark rum

8 Tbsp brown sugar

8 Tbsp dark rum

¾ cup butter, softened

¾ cup brown sugar

4 eggs, room temperature

¼ tsp zest of 1 lemon

¼ tsp zest of 1 orange

½ tsp vanilla

¾ cup flour

½ tsp baking powder

½ tsp cinnamon

¼ tsp nutmeg

4 Tbsp dark rum

4 Tbsp cherry brandy (soak cherries in the rum as a substitute)
