Yes, there is going to be real food at this year's Waterfront Festival thanks to an incredible assortment of gourmet food trucks participating. Finally a great event with great food. Here is this year's line up:

Whenever people see the Pretty Sweet truck, they ask me how I got here.

Usually, I answer, “Yonge Street, then over to the 401…” before they interrupt me with, “No, how did you get here? How did you become a cake artist?”

The short answer? I always loved to bake. I started making cakes as a hobby for family and friends, and then I blossomed my passion into a career in confectionary arts.

The long answer? I didn’t just love baking. I lived for it. But I knew there was way more to becoming an accomplished cake designer than just loving the craft. So, I worked hard. I made cakes for family and friends. And I made practice cakes that would ultimately go uneaten. Hundreds of them. Maybe thousands.

Eager to always outdo the last cake I baked, I studied at the Bonnie Gordon School of Cakes in Toronto, learning from the best of the best, including the very talented Peggy Porschen.

That’s what drove me here.

During a backyard renovation my husband Charles decided to use his masonry skills and various stones leftover from his jobsites to create a wood fired pizza oven. Never having eaten wood fired pizza before we were surprised to find it totally transformed our idea of what real pizza was. It created a passion in us to try as many wood fired restaurants as we could find, read as many books as we could get, scour the internet for ideas, all to perfect our version of wood fired pizza.






Bonfire Catering started as an idea when we had strangers in our community as well as friends of friends asking if they could come to dinner to experience this great food they had heard about. During our online research we saw that there were some mobile wood fired ovens out there but it was almost nonexistent in Canada. The ovens we did see were mostly all the same, small trailers without a commercial kitchen so we did what we do when home renovating. I sketched what I wanted and Charles built it for me.
My original  idea was to go to farmers markets and to do a bit of private catering. Two seasons later we have found ourselves  immersed in a growing food truck culture here in Ontario and couldn’t be happier. Weddings, television shoots, Bar Mitzvah , 75th birthday parties, concerts, employee or customer appreciation lunches , grand openings, frosh week, homecomings  and of course food truck events all make a varied and interesting work week for us.  If you have an event we would love to hear about it and discuss how we can make it fabulous or to see you on the road at one of the fun public events we attend. The Dirty South is a gourmet BBQ mobile food truck. The General Lee style “Genny” hit the streets of Hamilton and surrounding area in July of 2012. Head chef and food truck-preneur, Brett Liersch has over 25 years of experience in the food industry, the past 11 for a leading restaurant chain.

He finally became sick working in a monotonous chain environment where checklists over took quality and creativity. He decided to do something for himself and focus on a past catering venture (the “classy cousin” catering company called Kreative Katering) as well as develop a new outlet “The Dirty South” where he could take a love of BBQ food and add a gourmet twist. He is constantly coming up with featured items and unique variations of the menu.

The Dirty South boys try and set themselves apart with a unique twist on comfort food, offering generous portions at a reasonable price. All of the sauces, seasonings and rubs are made from scratch, anything they can’t make themselves, they source out to local business that operate under the highest standards. They truly are bringing the deep South to you ... literally. See you on the streets!
